I go to the gym at least twice a week.
・go to the gym と現在形なのは「現在の習慣」を表しているため。現在形は「広く一般的な内容」を表すことができる
・at least は「少なくとも」。at は「点」、least は little（少ない）の最上級。「最も少ない点であっても」ということ

②ちょっと大変よ、特に仕事の後は。でも「努力なくして進歩なし」よね？
It’s a bit tough, especially after work. But, “No pain, no gain,” right?
・especially は「特に」で、特に目立つ顕著なものを取り上げるときに使う
**tough: つらい、きつい、厳しい

Yes, I think so. It was very difficult to choose among all the applicants, but how about these three?
・among は「一群のモノ・人々」を表す前置詞。all the applicants（すべての応募者）を一人一人明確には意識していないため among が使われている
・how about ~? は気軽な提案「～はどうですか？」
②皆さん十分資格があるし、素晴らしい職歴をお持ちだし。彼らとの面接を設定することにしよう。
They are all well-qualified and have a great work history too. Let’s set up an interview with them.
・set up は会合などを「用意する、設定する」でカレンダー上に予定をしっかりと立ち（set）上げる（up）というイメージ
