it ~ that … の形。「that以下が本当の主語で…」などと考えず、語順どおり理解する

ここでは、心に浮かんだ状況を受け It’s interesting (興味深いですね) とまず言い切っている
そのままでは何が興味深いか伝わらないため、it の内容を that節で追いかけている
that節だけでなく、to不定詞や動詞-ing形を使って追いかけることもできる
